Salmon Ricotta Raviolis

Serves 4-6 people
For the raviolis, you'll need: package of 50 square wonton wrappers, 1 batch of salmon/ricotta filling (found below), 3 quarts of boiling water, 1 tsp salt, 2 Tbsp vegetable oil. For the Salmon/Ricotta Filling you'll need: 1 Tbsp crushed garlic, 2 Tbsp butter, 6-7 oz cooked salmon (from can or fresh), 1 cup ricotta cheese, 1/2 tsp dried dill, pinch of salt and pinch of pepper.
How to prepare filling: Place butter and garlic in saute pan on med heat for 2-3 minutes (stir regularly). Add salmon, cheese, dill and stir until all ingredients are mixed well together, for 5-7 minutes. Set aside to cool, before adding to wonton wrappers. How to prepare raviolis: Bring water, salt and oil to a boil. You'll place the raviolis (once put together) in the boiling water for about 2 minutes, or until they float to the top. Then place them in a single layer on a serving platter. For specific instructions on how to put the ravioli's together, see the Vegetable Ravioli's recipe, CLICK HERE.  For the sauce, you'll need: 16 oz jar of good, organic tomato and basil pasta sauce, 1/2 cup of red wine. How to prepare sauce: Pour jar of sauce into sauce pan, add red wine and stir occasionally for 10 minutes on low-med heat (until sauce is at preferred temperature).
For garnish, you'll need: 1/2  to 1 cup of grated parmesan cheese, 6 fresh basil leaves thinly sliced (into confetti strips). Simply sprinkle over entrees on serving plates as desired.
