garlic, greek burgers

Serves 4
Burger Ingredients: 1 lb of fresh ground lamb meat, ¼ cup of fresh Italian parsley, ¼ cup of bread crumbs, 1 tsp dried dill, ¼ cup of grated parmesan cheese, 5 cloves of garlic, ½ tsp of black pepper (ground pepper mill preferred), ½ tsp of salt (ground sea salt preferred), ½ tsp of garlic salt (for pitas/buns), 2 tsp Extra Virgin Olive Oil, 2 Full size round pitas or 4 buns, ¼ cup feta Cheese, ¼ cup of Thaziki sauce (see recipe attached), 1 white onion Thaziki sauce: 1.5 cups light sour cream, 1 Tbsp crushed garlic, 1 Tbsp dried dill, 2 Tbsp lemon juice, 1 Hot house cucumber (peeled), ½ tsp salt, 1 tsp black pepper
Additional Condiments if desired: Sliced tomatoes, Spicy beer mustard, Radicchio lettuce or Endive leaves How to make: Put ground lamb meat in a large mixing bowl. Finely chop the garlic cloves, ¼ of the white onion and fresh Italian parsley. Add to bowl w/ meat. Add bread crumbs, parmesan cheese, dried dill, pepper, salt and olive oil, to bowl of meat. With your hands (take rings off) slowly knead through the ingredients in the bowl, mixing them all together. Score an “x” or a cross “+” symbol through the meat with your hands (so you have 4 even portions of the meat). Create 4 patties w/ the meat and set aside. Slice up the other ¾ of the white onion (so they are in ring shapes); very lightly, sprinkle them with olive oil and sprinkle a pinch of dried dill and garlic salt on them. Set aside for grill. Cut your whole pitas in half. Evenly fill each of the halved pita pockets w/ feta cheese (or spread tops of buns with feta cheese). Sprinkle the outside of the pitas/buns w/ olive oil, lightly salt the outsides w/ garlic salt and set aside to place on the grill. Over medium high heat, place the hamburger patties on the grill. Cook about 5 minutes on each side. Internal temperature should be 160 degrees. Vary it as desired. After the first 5 minutes, flip the meat and grill for an additional 5 minutes. At the first 5 minute mark, add the onions and pitas/buns to the grill (cook each side for 2.5 minutes). Thaziki sauce: Put the light sour cream in a bowl. Add the garlic, dill, lemon juice, salt and pepper. In a separate plate or bowl, grate the peeled cucumber. Squeeze the grated flesh to remove the juice. Add the cucumber flesh to the other ingredients. Stir together. Taste to see if you need to add more salt or pepper. Burger preparation: Add Thaziki sauce to the inside of the buns/pitas. Spread out the melted feta cheese that has melted within the pita. Add the lamb burgers, grilled onions, spicy mustard, lettuce or endive and tomatoes.
