pineapple, banana bread

Serves 8
Dry ingredients
1/4 cup brown sugar
3/4 cup white sugar
2 cups all purpose flour
1/2 tsp salt
1/4 tsp nutmeg
1/4 tsp cinnamon
1/2 tsp baking soda
1.5 tsp baking powder
Wet Ingredients:
1/2 - 1 tsp Orange Zest
1/4 cup raisins
4 ounces cream cheese (melt 40 sec in microwave)
1/2 cup drained, crushed pineapple
2 eggs
1/2 cup melted butter
3 medium, ripe bananas (mashed)
Other:1/2 cup slivered almonds
How to Make: Mix all the dry ingredients in a bowl and stir together.
Mix all of the wet ingredients together in a separate bowl (note, mash bananas with potato masher in separate bowl and then combine with other wet ingredients). Fold dry ingredients into bowl w/ wet ingredients and mix well (but gently). Grease a 9”x5”x3” baking pan. Pour batter into baking dish. Sprinkle almonds evenly over top. Add more orange zest on top as desired. Bake for 55 minutes on 350 degrees. When done cooking, let it cool for about 10-15 minutes. Serve while warm with butter or soft cream cheese.
