You'll need: 1 cucumber (peeled and sliced), 3-4 medium sized tomatoes (sliced), 1 red onion (thinnly sliced), 1 roasted bell pepper (sliced), 12 green olives, 6 basil leaves (sliced in confetti strips), 2 Tbsp peppercinis (sliced), 1/8 cup shreaded parmesan cheese, 1 lemon (juice of 1 lemon, zest of half lemon), 2 Tbsp balsamic vinegar, 2 Tbsp Extra Virgin Olive Oil, 1/4 tsp salt and 1/4 tsp pepper
How to make: Evenly spread out all the vegetables on a serving platter. Sprinkle olives, basil, peppercinis and parmesan cheese on top. Zest half the lemon over salad. Mix juice of one lemon, vinegar, olive oil, salt and pepper in a bowl. Evenly pour over salad. Enjoy!
