Asparagus Prosciutto Spears with Lime Vinaigrette

Serves 4
You'll Need: 12 asparagus spears (rinsed, dried and ends trimmed off), 6 oz prosciutto (about 12 thin pieces), olive oil spray, 4 handfuls of greens, lime vinaigrette (see recipe below), 2 to 4 Tbsp crumbled blue cheese
How to Make: Spray a baking sheet with olive oil spray. Wrap prosciutto around middle of 2 asparagus spears. Repeat with remaining spears and prosciutto. Place asparagus evenly on baking sheet about 2 inches apart. Bake in 350 degree F oven for 15-20 minutes until spears are tender and prosciutto is crispy.
Lime Vinaigrette: 1/2 tsp grainy mustard, 1 Tbsp white wine vinegar (preferably pinot grigio vinegar), 2 Tbsp extra virgin olive oil, juice of 1/2 a lime, zest of 1/2 a lime, 1/2 tsp sugar, pinch of salt
How to Make: Combine all ingredients in a medium glass bowl. Whisk together until everything is well incorporated. Taste to see if you need to adjust salt.
How to Plate: Place greens on serving platter, or on individual plates. Place spears on plate(s). Evenly sprinkle blue cheese and drizzle dressing on top. Enjoy.
