You'll Need: 4 white or wheat Tortillas (medium to large), 16 oz shredded chicken breast (can be grilled, baked, sauteed or broiled - just remove bones), 1/4 tsp dried fennel seeds (finely chopped), 1/4 cup walnuts (chopped), 2 Tbsp dried cherries (finely chopped), 3 Tbsp olive oil, pinch salt, pinch pepper, 1/4 cup feta cheese (crumbled), 4 small handfulls of fresh arugula or spinach.
How to Prepare: In a medium preparation bowl, mix together the chicken, fennel, walnuts, cherries, olive oil and salt and pepper. Place an even serving portion in the middle of each tortilla. Sprinkle cheese and greens on top and serve.
Note: You can serve as a 4 main entree meals or slice all 4 wraps up into 4 pieces and serve as 8-16 appetizers.
