Lemon Tuile Cookies

"Tuile" or "Tile" Cookies
These are so great for dipping in hot tea or coffee. Treat yourself to these delicious cookies, in the shape of little "tiles".
Makes about 12 cookies
You'll Need: 1/2 cup granulated sugar, 1/4 tsp vanilla, 6 Tbsp unsalted butter (melted), 2 large egg whites, 1/3 cup all purpose flour, pinch of salt, 1/4 cup walnuts (finely chopped), 1/4 cup amaretti cookies (finely ground), 2 tsp fresh lemon zest, powdered sugar for dusting

Cooling the cookies in the shape of a "Tuile" or a "Tile"
How to Prepare: Preheat oven to 400 degrees F. In a large bowl, whisk the sugar vanilla, butter and egg whites. Sift the flour and salt into the mixture and whisk together. Fold in the walnuts, amaretti cookies and lemon zest. Prepare a baking sheet with non stick spray, parchment paper or a silpat (I use the silpat). Spoon 2 Tbsp portions onto the silpat. Keep them about 4" from one another to avoid overlap. Bake on the middle rack for 8-10 minutes until they start to brown. Remove from oven and let cool for a couple minutes. With a butter knife or small spatula, gently remove the cookies and shape over a rolling pin, to further cool. This will allow the cookies to form their final shape of a tuile ("tile" in French). Sift powdered sugar over the tops of the cookies, to your desired amount. Enjoy!
