Serves 4
You'll Need: 1.25 pounds of lean ground beef (grass fed if possible), 1 medium sweet potato (peeled and finely diced; it's about 1 cup), 1 small shallot (finely diced), 1 clove garlic (finely diced), 1 cup panko bread crumbs, 1 cup whole milk, 1 large egg (beaten), Pinch of nutmeg (freshly grated), 1/2 tsp kosher salt, 1/4 tsp black pepper, 1/3 cup ketchup, 2 Tbsp brown sugar, 2 Tbsp spicy mustard
How to Prepare: Preheat oven to 350 degrees F. Spray a 5" x 9" loaf pan with non-stick pray, and set aside. In a large preparation bowl, combine the beef, sweet potato, shallot, garlic and bread crumbs and mix well with your hands. Add the milk, egg, nutmeg, salt and pepper and again mix together well. Transfer to loaf pan. In a separate bowl, mix the ketchup, brown sugar and mustard. Evenly spread on top of meatloaf. Place in oven on center rack, for 1 hour. Remove from oven. Let cool for 5-10 minutes. Serve using the existing pan or remove meat with a spatula and place on a serving tray. Garnish with herbs.
Optional: Chop up 1/2 cup fresh parsley and stir into meatloaf before cooking. Garnish with more parsley as well.
