Balsamic Brussels Sprouts

Serves 4
You'll Need: 1.5 pounds fresh brussels sprouts (organic if possible), 2 Tbsp olive oil, 2 Tbsp unsalted butter, 1/4 tsp kosher salt, pinch freshly grated black pepper, 1/2 cup aged Balsamic vinegar, 1/4 cup pure maple syrup, 2 Tbsp orange juice (freshly squeezed through sieve), more salt and pepper (to your taste buds)

Browning the Brussels Sprouts
How to Prepare: Rinse and dry the brussels sprouts. Note, if they are fresh on a stalk to begin with, carefully cut them off the stalk with sharp cooking shears or a knife (then rinse and dry them). Heat the oil and butter in a large saute pan. Using medium to high heat, add the brussels sprouts to the saute pan. Stir them in the pan intermittently so they don't burn.
Allow them to get a nice browning on each side (about 5-10 minutes total). Evenly sprinkle with salt and pepper. In a separate bowl, whisk together the vinegar, syrup and orange juice. Pour this mixture over the brussels sprouts and stir so the liquid comes in contact with all sides of

the brussels sprouts. Reduce heat to low and cover with a lid. Allow to cook for an additional 15-20 minutes, until the brussels sprouts are fork tender. Stir everything to combine the sauce and the brussels sprouts. Taste and add additional salt or pepper as desired. Transfer to a serving bowl. Enjoy.
