Jalapeno, Pancetta, Turkey Burgers

Serves 4-6 burgers
You'll Need: 
2 oz uncooked pancetta (diced), 1/2 cup parmesan cheese (freshly grated), 4 crimini mushrooms (wiped down with damp cloth and diced), 1 small shallot (diced), 1 clove garlic (minced), 1 fresh jalapeno* (seeds and stem removed, diced very small), 1/2 cup panko bread crumbs, 1 Tbsp fresh Italian parsley (leaves only, chopped), 3 oz sausage (no casings), 1 lb lean ground turkey, 2 Tbsp virgin olive oil, 1/4 tsp kosher salt, 1/8 tsp black pepper (freshly cracked)
Garnish as desired; with or without a bun. We like to place our burgers between a small English muffin, add some mustard and fresh basil and a nice slice of chipotle cheddar cheese. Get creative and you choose how to garnish your own burger!

How to Prepare:
Place all the burger ingredients in a large preparation bowl. Remove your watch and rings if desired. Mix everything up with your hands until everything is well incorporated (about 2-3 minutes). Score the meat with your hand into 4 or 6 sections. Remove each portion with your hand and shape it into a circular burger shape. Place on a platter and take out to the grill. Prior to heating your grill, spray your grill with non-stick spray. Set your grill to medium heat. Place burgers on grill for 5-7 minutes per side. Since these consist of ground turkey, your burgers need to reach an internal temperature of 165. Remove from grill and allow to rest for 3-5 minutes. If you want to add cheese, you can add a slice of cheese to the burger once you've flipped it, so it melts into the burger a bit, or you can add the slice of cheese to the burger once it's off the grill. We love the cheese from Venissimo. All their cheeses are delicious.

* After touching the jalapeno with your hands, wash your hands incredibly well.
