Cooking Tip: Tenderize your ground meat before mixing it in with the other ingredients, for a more tender, moist meatloaf.

Mix Ingredients Together |
Meatloaf, You'll Need: olive oil spray, 3/4 cup panko bread crumbs, 1/2 cup pecans chopped, 1/2 cup golden raisins, 3/4 cup parmesan cheese (freshly grated), 1 large egg (whisked), 1 medium red or yellow potato (peeled and cut into small cubes), 2 Tbsp unsalted butter (room temperature), 1/2 cup fresh chives (chopped), pinch nutmeg, pinch kosher salt, pinch black pepper, 1.25 lb ground chicken or ground turkey
Sauce, You'll Need: 1/4 cup spicy mustard (or plain yellow mustard), 1/4 cup sweet barbecue sauce
Garnish with 8 whole chives (use 2 whole chives per mini meat loaf)
How to Prepare: Using the olive oil spray, spray 4 mini loaf

pans. Line a large baking sheet with parchment paper or a silpat. Set aside. Preheat oven to 350 degrees F. Using a meat tenderizer, tenderize the meat. In a large preparation bowl, combine all the ingredients. Using the tenderizer, mash everything together a bit. Then, using your hands, mix everything together until it is well combined. Score an X in the meat mixture with your hand, portioning out 4 even portions. Take each portion and transfer to a mini loaf pan. Mix the sauce ingredients in a bowl. Spoon an even amount of sauce over the tops of the meat mixture in each loaf pan. Transfer loaf pans to the lined baking sheet. Place in oven in center rack for 35 to 45 minutes. Meat loaf will be browned slightly. A meat thermometer should register 165 degrees F. Remove from oven and let sit for 5 minutes. Note, you will have carryover cooking, and the internal temperature will rise slightly. Using a towel or oven mitten, turn meatloaf over onto serving plate. Note, you may need to loosen the sides with a blunt butter knife, to assist in removal. Sauce will drizzle down over meatloaf slightly. Garnish with two long chives if desired. Enjoy.

Note, to transform these into appetizers for more people, cut 5 slices horizontally. You can fan the pieces out, resulting in 4 little fans with 5 pieces in each. You can set toothpicks beside them, so your guests can pick one up off the tray with a tooth pick. Voila!
