For the Meat: 1 pound ground beef (grass fed, range free, 85/15), 2 cloves garlic (peeled, minced), 1 Tbsp olive oil
For the Veggie Saute: 1 Tbsp unsalted butter, 1 Tbsp olive oil, 1 medium shallot (diced), 6 crimini mushrooms (stems removed, diced), 1/2 of a medium zucchini (diced), 4 medium cauliflower florets (chopped), 1/2 large steak tomato (diced), 1 large red potato (previously boiled and cooled, chopped), 1 cup leafy greens (collards, kale, or spinach; chopped), pinch kosher salt, pinch freshly ground black pepper
For Assembly and Garnish: 8 large Romaine lettuce leaves (stems removed), 1/2 cup sour cream or creme fraiche, 1/4 cup ricotta cheese 1/2 cup shredded parmesan cheese, 1/2 cup fresh Italian parsley (chopped), 1 large Haas avocado (pitted, halved and thinly sliced)
How to Prepare: In a large sauté pan, heat the 1 Tbsp olive oil. Using a meat tenderizer, break up the ground beef. Stir in the minced garlic. Add meat mixture to sauté pan. Stirring regularly, brown and cook the meat over medium heat for 8-10 minutes. Drain meat and set aside. In a large sauté pan, heat the 1 Tbsp butter and 1 Tbsp olive oil. Add shallot, mushrooms, zucchini and cauliflower. Sauté over medium heat for 5-7 minutes, stirring occasionally. Add tomato, potato, leafy greens and sauté for an additional 3-5 minutes until everything is tender. Transfer veggies to a large bowl. Stir in the meat.* Add salt and pepper to taste (you can always add more but you can't take it out, so add it sparingly). On a large tray, lay out your 8 lettuce leaves. Eyeball 8 servings of the meat and veggie mixture, so you have enough to fill each lettuce leaf. Using a large spoon, fill up lettuce leaves in the center of each. In a small bowl, combine the sour cream and ricotta and mix well. Add a dollup to each lettuce leaf if desired. Sprinkle wraps with Italian parsley and parmesan. Lay a couple slices of avocado atop each wrap. Enjoy.
* If you don't want to add the meat, just omit this step. You can double the veggies instead.
You can serve this as a hearty meal for 4 people; each person gets 2 loaded lettuce leaves. Or, you can serve it as an appetizer; each person gets 1 whole lettuce leaf. Or you can cut them in half, width wise and serve 16 smaller appetizer portions.
