Serves 10-12
You'll need: 4 wedges of watermelon, 2 Tbsp fresh basil (thinly sliced), 8 ounces of light sour cream,
1/2 orange (zest of and juice of), 1/2 cup of white sugar
How to make: Grate watermelon over a box grater. Drain the juice from the watermelon flesh. Stir watermelon into a bowl with sour cream. Add basil, orange zest, orange juice and sugar; stir together. Let chill in refrigerator for 1 hour. Serve over pound cake, mixed fruit or ice cream. Light and yummy! If you like things on the sweeter side, use low fat vanilla or strawberry yogurt, instead of light sour cream.
