Serves 2
You'll need: 6 fresh basil leaves, 6 sprigs of asparagus whole (snap ends off), 3 Tbsp hummus (store bought or homemade*), 5 green olives
6 pieces of light salami halved, 1 medium fresh tomato sliced, 1/4 of white or red onion (thinly sliced), 1/2 cucumber (peeled and thinly sliced), 2 Tbsp artichoke hearts (whole or halved), 1 to 2 Tbsp feta cheese, Salt and Pepper to taste, 2 tsp extra virgin olive oil. Please use organic or pesticide free vegetables. How to make: Arrange all food ingredients on plate. Sprinkle with salt and pepper. Drizzle olive oil evenly over top. Enjoy with a nice glass of chilled red French wine.
* Dani's homemade Hummus - 6-8 servings:
You'll need: 1 can (14-16 oz) chick peas drained, 2 tsp crushed garlic, 2 Tbsp olive oil, 1 lemon (zest of 1/2, juice of 1), 2 Tbsp Tahini (sesame seed spread), 1 Tbsp cold water, Salt and Pepper to taste How to make: Blend all ingredients in food processor until mixed well. Garnish with paprika, chopped up kalamata olives and/or pine nuts if you'd like. Enjoy!
