You'll Need: 4 Tbsp unsalted butter (melted) plus more butter to grease baking dish, 1/2 loaf of French bread baguette (thinly sliced and torn or sliced into small pieces), 2 medium butter croissants (torn into small pieces), 1/2 cup dried orange cranberries, 4 large eggs (beaten), 1.5 cups 2% organic milk, 1/2 cup organic cream, 3/4 cup granulated sugar, 1/2 tsp fresh orange zest, pinch ground cinnamon, 1.5 tsp vanilla extract, 1/4 cup brown sugar
How to Prepare: Preheat oven to 375 degrees F. Grease a 10x10 baking dish with the extra butter. Toss the torn bread and croissant pieces in a bowl and mix with the dried cranberries (using your hands is fine). Transfer to baking dish. Evenly pour melted butter over bread. In a separate large bowl, whisk eggs, milk, cream, white sugar, orange zest, cinnamon and vanilla until all is well incorporated. Evenly pour mixture over bread in baking dish. Using your fingers or a fork, gently push the bread mixture down into the wet mixture in the dish, so all the bread gets covered with the egg and milk mixture. Evenly sprinkle the brown sugar on top of the bread. Place in oven for 40-45 minutes (until when lightly pressed upon, the bread pudding springs back). Remove from oven. Let cool for 10 minutes. Lightly whip up some cream with a pinch of sugar to make a chantilly cream to pour over the bread pudding. Or, serve with a scoop of vanilla ice cream. Enjoy!
