Makes 2-3 dozen cookies
You'll Need: 1 3/4 cups all purpose flour, 1/2 cup coconut flour, 1 tsp baking soda, 1/2 tsp kosher salt, 2 Tbsp cocoa powder, 8 oz unsalted butter (room temperature), 3/4 cup granulated sugar, 3/4 cup light brown sugar, 1 tsp pure vanilla extract, 2 large eggs, 1 1/2 cups chocolate chips or chunks, 3/4 cup shredded coconut
How to Prepare: Preheat oven to 375 degrees F. In a large preparation bowl, whisk flours, baking soda, salt and cocoa powder. Set aside. In a separate bowl, using a mixer with beater attachments, cream the butter and sugars until smooth. Beat in the eggs one at a time. Mix in the vanilla. Using mixer, combine all the wet and all the dry ingredients together (except chocolate chunks and shredded coconut). Scrape down the sides and mix again, to incorporate everything together well. Stir in the chocolate chunks and shredded coconut. Place the dough onto an un-greased baking sheet, using a small ice cream scooper, and position about 2" apart. Place in oven for 8-12 minutes. Start with 8 minutes. Cookies should be lightly browned on top. Add more time in 2 minute increments if needed. You can add baking time but you can't take it back. Bake these in batches until you run out of dough.
