Rockin Guacamole

Makes: Enough for 4-8 people
You'll Need: 4 large avocados (ripe), 1/2 medium white onion (finely diced), 1/3 fresh poblano chile pepper (finely diced), handful of fresh cilantro (stems removed, chopped, about 1/2 cup), zest of half an orange, fresh juice of half an orange*, pinch or two of salt

How to Prepare:

Peel and remove pits from avocados. Using a potato masher or a large fork, mash up your avocados. Stir in the remaining ingredients. Transfer to a serving bowl. Slather this guacamole on your burgers, dip veggies or chips in it, or just eat it by the spoonful. Enjoy.

* Note, zest your citrus before juicing it (when you need both the zest and the juice). We use a wooden reamer to quickly juice our citrus. We juice citrus over a strainer or sieve and reserve the juice in a bowl.
