Serves 8 (Makes approx 16-20 large cookies)
You'll need: 1/2 cup butter (softened), 1/2 cup cream cheese (softened), 1 cup packed brown sugar, 1/2 cup granulated sugar, 1/2 tsp baking soda, 2 Tbsp vegetable oil, 2 eggs, 1 Tbsp orange marmalade, 1 tsp vanilla, pinch of salt, 2 ½ cups flour, 6 ounces white chocolate chips, 6 ounces milk chocolate chips, 1 cup chopped walnuts, 1/2 cup shredded coconut
How to prepare: Mix first 5 ingredients w/ electric mixer on med-high speed. Add in ingredients 7-10, continue mixing. Slowly & gradually add in flour. Mix in (on low) chocolate, walnuts and coconut. Pre-heat oven to 375 degrees F. Drop dough onto ungreased cookie sheets about 2" apart, using heaping rounded tablespoons. Bake 12-18 minutes (until edges are brown). Since these are fairly large cookies, test one by inserting a toothpick into center of finished cookie. If it removes cleanly, they are ready. Serve with milk.
