Serves 4-8
You'll Need: 1 3/4 cups basil (fresh, organic, packed), 1/4 cup tarragon (fresh, organic, packed), 1/4 tsp lemon zest (fresh, organic), 1/3 cup walnuts (whole), 2 cloves garlic (fresh), 3/4 cup extra virgin olive oil (from Italy, preferred), salt and pepper (to taste), 1/2 cup Pecorino Romano cheese (freshly grated)
How to Prepare: Place basil, tarragon, lemon, walnuts, and garlic in food processor. Pulse until everything is combined and coarsely chopped. Add salt and pepper. Drizzle in the olive oil until you have a smooth consistency. With a spatula, transfer the beautiful pesto sauce to a bowl. Gently stir in the cheese until incorporated.
You can use the pesto as a dipping sauce for vegetables, pour over fresh pasta, or use it as a spread on panini sandwiches or burgers. Enjoy!
