Makes about 40 cookies
You'll Need:
2.25 c all-purpose flour, 1 tsp baking soda, 1 tsp salt, 1 cup unsalted butter (at room temperature), 3/4 cup granulated sugar, 3/4 cup brown sugar, 1 tsp pure vanilla extract, 2 large eggs (room temperature), 1 cup white chocolate chopped, Zest of 2 medium lemons, 2 tsp dried edible lavender (finely chopped), 3 tsp crystallized ginger (finely chopped)
How to make:
In a large bowl, using a hand held electric mixer with whisk attachments, beat sugars and butter together until well blended. One at a time, add the eggs and blend well. Add vanilla and mix together. In a separate bowl combine the flour, baking soda and salt. Slowly add this dry mixture to the wet ingredients. Slowly add in the crystalized ginger, lavender, lemon zest and white chocolate. Using a small cookie scooper, scoop the dough onto a parchment lined baking sheet (cookie dough should be about 1.5 to 2" apart). Place in a preheated oven at 350 degrees F for 10 minutes. Transfer tray to a heat safe surface. Let cookies cool on sheet for 5 minutes then transfer to a cooling rack. Repeat until all the cookie dough is baked. Enjoy.
